As per requested for my first blog post!!!! Y'all, I love a good salsa. It has to have the right amount of heat and spice. My search to find one, never was exactly the way I wanted it to taste, so...after much trial and error, I think I finally have it down to my tastebud perfection. Pair this with tortilla chips for one mouth watering side dish! Add it to fajitas, tacos, etc. It is crazy simple, just toss everything into a food processor or blender, and wha-la! I can't buy jar salsa anymore because once you make it from scratch there is no going back. I like to make it ahead of time so the ingredients have time to meld. You can omit the sugar, however, I like to add as it will balance the acidity of the tomatoes. You can also substitute fresh, out of the garden tomatoes (chop them up and squeeze them to retain juice).
Here is a list of ingredients:
28oz can whole plum tomatoes including the juice (I use San Marzano)
1 Small white onion chopped
2 jalopeno peppers chopped (I keep the seeds so they add some kick)
4 Garlic cloves chopped
1 Handful of Cilantro chopped
Juice of 2 limes
1 teaspoon granulated white sugar
1 teaspoon sea salt (or to taste)
Add all ingredients to the food processor or blender in the order listed and blend until smooth or desired texture.
Place in container with air tight lid and store in refrigerator for at least 2 hours or 24 hours for the best taste.
Enjoy with your favorite chip...mine is Late July Tortilla Chips dusted with Lime and Sea Salt.
